Dame Kim Hanks, a proud dual member of LDE London and the Austin, Texas chapter, has been kind enough to share with us a cherished recipe that holds a special place in her heart. Her mother, Darlene, perfected this corn pudding, a dish so loved by her family that Kim keeps the original handwritten recipe safely stored in her jewelry box.
“It’s so special to our family we don’t want to lose it. It’s super easy to make, and everyone goes back for seconds!”
This dish is a shining example of how simple ingredients can create something truly memorable. It’s a creamy, comforting side that’s perfect for Thanksgiving or any family gathering.
Darlene’s Corn Pudding

1 can creamed corn
2 eggs, slightly beaten
2 tablespoons flour
2 tablespoons sugar
1 cup milk or single
Sprinkle of salt and pepper (to taste)

Preheat: Set your oven to 300°F.
Mix Ingredients: In a large bowl, combine the creamed corn, eggs, flour, sugar, milk (or cream), salt, and pepper. Stir until well mixed.
Prepare the Dish: Butter a tall casserole dish (the mixture will rise like a soufflé, so choose a dish with height).
