5 Minutes With… Natalia Middleton

Meet Dame Natalia Middleton, a talented chef whose love of flavour, comfort food, and connection shines through everything she does. She Head of Food Education at Food Behind Bars.

Q: If you hadn’t taken the career path you’re on now, what do you think you’d be doing instead?

I had planned to be a police officer before I trained as a chef, so I’d probably be doing that!

Q: What’s been the proudest moment of your career so far?

Being included in The Guardian’s 2023 OFM “30 Things We Love in the World of Food” — that was pretty incredible.

Q: What does being part of LDE mean to you, and what would you say to someone thinking about joining?

It’s a wonderful group of like-minded women who help and support each other and the wider community — values that are really important to me. Definitely join; it’s brilliant, and there’s always someone up for a meal or coffee.

Q: What five ingredients do you always have stocked in your fridge or pantry?

Grated mozzarella, Maldon sea salt, soy sauce, pasta, and honey.

Q: What’s your dream foodie destination and why?

Japan! I adore all the food — it just looks like pure heaven and super comforting.

Q: What’s your go-to comfort food when you’re feeling under the weather?

Either a mashed banana with lemon juice and honey (my mum used to give me this when I was ill — not sure why, but it’s yummy!) or some kind of chicken soup, usually a pho.

Q: You’re stuck on a desert island and can only bring three snacks — what are you packing?

Coffee, dark chocolate digestives, and some kind of cheese — probably Manchego or Comté.

Q: If you could only use one kitchen appliance for an entire meal, which would you pick, and what would you cook?

Definitely our air fryer — I love it! I actually cooked our whole Christmas dinner in it a couple of years ago, and it was great. We probably use it every day.

Q: What’s your favourite food-related movie or TV show, and why?

Chef’s Table. I adore it. The storytelling, the visuals, and the way the dishes are shown at the end set to classical music — it’s like therapy. I find it so soothing.

Q: What’s the most unforgettable meal you’ve ever had, and what made it so special?

The first time I ever had feijoada. It was in a family restaurant in São Paulo with my parents and the people who helped them adopt me. I really felt at home. I fell in love with the flavours and textures and have never forgotten it — it’s now my go-to family meal.
