Our recent online event, Celebrate Diwali: The Festival of Lights, was a beautiful reminder of what makes our community of Dames so special — connection, learning, and the joy of sharing food and culture together, even across a screen.
Hosted by Dame Radhika Howarth, we were taken on a heartfelt journey into the meaning and traditions of Diwali — a festival symbolising light over darkness, knowledge over ignorance, and kindness and generosity at the heart of family and community. Radhika shared memories from her mother and grandmother, the significance of marigolds and candles, and how the spirit of Diwali continues to evolve while remaining rooted in reflection and gratitude.




As she cooked a fragrant festive rice dish live, we learned the secrets of the masala dabba (the traditional spice box), how to layer spices for maximum flavour, and why garam masala should be added right at the end. The conversation flowed from cooking tips and kitchen stories to ideas for future Dames cook-alongs and plans for an in-person Diwali celebration next year.
Here are Radhika’s quick tips for cooking with spices:
- Start with whole spices: Add them first to hot oil or ghee — the heat helps release their aroma and flavour.
- Make sure the oil is hot: You need that sizzle to extract the true essence of the spices.
- Add powdered spices mid-way: Stir them directly into the dish or mix into a thick paste with water before adding.
- Add souring agents last: Ingredients like tamarind, lemon, or vinegar should go in towards the end — they can interfere with cooking if added too early.
- Finish with garam masala: Add it right at the end for that final burst of warmth and depth.
It was, in every sense, a feast for the senses and the soul — full of laughter, generosity, and that special warmth that comes when Dames come together to share food, stories, and light.
